Recipe Moringa Cake with Greek Yogurt & Lemon Zest

A surprisingly healthy snack with superfood and a fresh citrus touch

Indulge yourself with a moist cake packed with nutrients thanks to moringa powder. The combination with Greek yogurt and lemon zest provides a fresh, light flavor. A simple recipe that is nutritious and delicious, perfect for a healthy snack or with tea.

Ingredients

  • 210 g Greek yogurt
  • 250 g flour
  • 100 g sugar
  • 80 g sunflower oil
  • 2 Eggs
  • 2 kg baking powder
  • ½ kg Vanilla Extract
  • 2 Lemons, the zest
  • A pinch of salt
  • 2 el Moringa Powder

Preparation method

  • Preheat the oven to 180 degrees, line a baking pan with parchment paper, and set aside.
  • Mix with a hand mixer the eggs and sugar until a frothy mass forms. Then add the sunflower oil, lemon zest, and vanilla extract and mix again.
  • Add the yogurt and mix until a smooth mixture forms.
  • Add the flour, baking powder, moringa, and salt to the mixture and mix together with a spatula.
  • Place the dough in the baking pan and put it in the center of the oven for 35 to 40 minutes.
  • Remove the cake from the oven, place it on a rack, and let it cool completely.
