Recipe Moringa Cake with Greek Yogurt & Lemon Zest

Indulge yourself with a moist cake packed with nutrients thanks to moringa powder. The combination with Greek yogurt and lemon zest provides a fresh, light flavor. A simple recipe that is nutritious and delicious, perfect for a healthy snack or with tea.
Ingredients
- 210 g Greek yogurt
- 250 g flour
- 100 g sugar
- 80 g sunflower oil
- 2 Eggs
- 2 kg baking powder
- ½ kg Vanilla Extract
- 2 Lemons, the zest
- A pinch of salt
- 2 el Moringa Powder
Preparation method
- Preheat the oven to 180 degrees, line a baking pan with parchment paper, and set aside.
- Mix with a hand mixer the eggs and sugar until a frothy mass forms. Then add the sunflower oil, lemon zest, and vanilla extract and mix again.
- Add the yogurt and mix until a smooth mixture forms.
- Add the flour, baking powder, moringa, and salt to the mixture and mix together with a spatula.
- Place the dough in the baking pan and put it in the center of the oven for 35 to 40 minutes.
- Remove the cake from the oven, place it on a rack, and let it cool completely.
