A light and colourful dessert with the pure flavour of açaí.

This Açaí tiramisu gives a fresh, modern twist to the classic dessert. Açaí, coconut yoghurt, coffee and raspberries combine to create a fruity and light dessert that is easy to layer. An easy dessert that is perfect for making in advance.
Ingredients
For the yoghurt mixture
2 tbsp acai
250 g coconut yoghurt
2 tbsp maple syrup
1 tsp vanilla extract
For the tiramisu
100 ml strong espresso
Cocoa nibs
Raspberries
Biscuits of your choice
Preparation
Stir the acai, maple syrup and vanilla extract into the plant-based yoghurt and mix well.
Dip the biscuits briefly in the coffee and place a layer of biscuits on the bottom of a dish or small glasses.
Spread a layer of the acai yoghurt mixture over the biscuits.
Now add a layer of raspberries.
Repeat with another layer of biscuits, a layer of raspberries and a final layer of yoghurt mixture.
Sprinkle with cocoa nibs for a crunchy topping.
Leave to set in the fridge for at least 2 hours for best results.
