Fancy some light and fluffy pancakes? These psyllium fluffy pancakes combine oat flour, banana and psyllium fibre to create a batter with a pleasant texture. Topped with raspberries, Greek yoghurt and a crunchy topping, they are ideal for breakfast or a relaxing snack. Simple, balanced and easy to make.

Ingredients

  • 100 g oat flour
  • 1 tsp baking powder
  • 1 tbsp psyllium fibre
  • 1 ripe banana
  • 300 ml (plant-based) milk
  • ½ tsp cinnamon
  • Zest of ½ lemon
  • Raspberries, for the batter

Toppings

  • Greek yoghurt
  • Raspberries
  • Honey
  • Pistachios

Preparation

  1. Mash the banana in a large bowl.
  2. Add the milk and mix well.
  3. Add the lemon zest, oat flour, baking powder, cinnamon and psyllium and stir well.
  4. Leave the batter to rest for 1 hour so that the psyllium can bind.
  5. Heat a little oil in a pan over medium heat.
  6. Spoon the batter into the pan and fry the pancakes for about 2 to 3 minutes on each side until golden brown. Press a few raspberries into the batter each time.
  7. Serve warm, sprinkled with chopped pistachios and your favourite toppings such as Greek yoghurt, raspberries and honey.
