A light breakfast recipe with psyllium and oat flour

Fancy some light and fluffy pancakes? These psyllium fluffy pancakes combine oat flour, banana and psyllium fibre to create a batter with a pleasant texture. Topped with raspberries, Greek yoghurt and a crunchy topping, they are ideal for breakfast or a relaxing snack. Simple, balanced and easy to make.
Ingredients
  • 100 g oat flour
  • 1 tsp baking powder
  • 1 tbsp psyllium fibre
  • 1 ripe banana
  • 300 ml (plant-based) milk
  • ½ tsp cinnamon
  • Zest of ½ lemon
  • Raspberries, for the batter
Toppings
  • Greek yoghurt
  • Raspberries
  • Honey
  • Pistachios
Preparation
  • Mash the banana in a large bowl.
  • Add the milk and mix well.
  • Add the lemon zest, oat flour, baking powder, cinnamon and psyllium and stir well.
  • Leave the batter to rest for 1 hour so that the psyllium can bind.
  • Heat a little oil in a pan over medium heat.
  • Spoon the batter into the pan and fry the pancakes for about 2 to 3 minutes on each side until golden brown. Press a few raspberries into the batter each time.
  • Serve warm, sprinkled with chopped pistachios and your favourite toppings such as Greek yoghurt, raspberries and honey.
