A light breakfast recipe with psyllium and oat flour

Fancy some light and fluffy pancakes? These psyllium fluffy pancakes combine oat flour, banana and psyllium fibre to create a batter with a pleasant texture. Topped with raspberries, Greek yoghurt and a crunchy topping, they are ideal for breakfast or a relaxing snack. Simple, balanced and easy to make.
Ingredients
- 100 g oat flour
- 1 tsp baking powder
- 1 tbsp psyllium fibre
- 1 ripe banana
- 300 ml (plant-based) milk
- ½ tsp cinnamon
- Zest of ½ lemon
- Raspberries, for the batter
Toppings
- Greek yoghurt
- Raspberries
- Honey
- Pistachios
Preparation
- Mash the banana in a large bowl.
- Add the milk and mix well.
- Add the lemon zest, oat flour, baking powder, cinnamon and psyllium and stir well.
- Leave the batter to rest for 1 hour so that the psyllium can bind.
- Heat a little oil in a pan over medium heat.
- Spoon the batter into the pan and fry the pancakes for about 2 to 3 minutes on each side until golden brown. Press a few raspberries into the batter each time.
- Serve warm, sprinkled with chopped pistachios and your favourite toppings such as Greek yoghurt, raspberries and honey.
