The cacao nibs are not made according to the Dutch Process. The cocoa beans are first selected and then dried. After that, there is a cooling period, after which they are selected again.
Finally, the dried cocoa beans are removed from the shell and the pure beans are ground into pieces/nibs.
Excellent product if you are mindful of your nutrition.
